and in between which make up do you use like waterproof mascara etc....

No make up at the beach!! Maybe just a waterproof mascara, yea.
and for the hair, a messy bun looks good...I like to leave my hair wavy on the shoulders..like Nicole:





or you can wear a colorful headband or a fedora Smile

i have long blonde hair so i usually wear it loose and use bumble and bumble surf spray, but if its hot i put protector in and put it up so it doesn't bleach
